Simple Syrups using Tea and Herbs




A tea simple syrup is an ideal way to sweeten summertime beverages for a fresh

variation to honey or other sweeteners. A recipe for Green tea and Lemongrass follows~ feel free to substitute the lemongrass with other heat stable ingredients to create your own signature syrup. ex. dried herbs or spices or dried fruits. Green tea Lemongrass syrup is a delicious addition to Cucumber Agua Fresca.

Yield 4 C

Ingredients:

5 C water

4C sugar

1 Lime wedge

2/3 C coarsely chopped lemongrass

4 Tbs. of green tea such as Sencha

Stir water and fresh lemongrass together in a saucepan, squeeze in the lime wedge.

Bring to a boil then reduce the heat and simmer for 10 min.

Stir in the sugar and simmer again until a light ,thin syrup forms.

Remove from heat and immediately stir in the tea leaves. Cool and strain. Refrigerate.

When using this syrup ,it is also nice to muddle some fresh basil to add to your beverage.
